UTILIZZO A SCOPO ANALITICO DEGLI ISOTOPI STABILI DI CARBONIO, AZOTO, OSSIGENO E IDROGENO PER LA DESCRIZIONE DELL’AUTENTICITÀ DI PRODOTTO

Academic Article
Publication Date:
2011
abstract:
Stable isotopes of carbon, nitrogen, oxygen and hydrogen were used for analytical purposes for the discrimination of the type of production (farming vs. fishing) in the case of sea bass and for geographical origin in the case of milk. These results corroborate similar experimental evidences and confirm the potential of this
analytical tool to support of food traceability.
