FASOLATO LUCA

Associated Professor, Scientific-disciplinary field VET/04 (Inspection of foods of animal origin), Department of Comparative Biomedicine and Food Science, University of Padua (since 2018).
Previous work experience: Contract as veterinarian with the National Reference Center for Fish, Crustacean and Mollusc Pathology of the “Zooprofilattico Sperimentale delle Venezie” (2005-2008). Post degree scholarship at the department of “Animal Science” at the veterinary medicine Faculty, Univeristy of Padua (2002-2005).
Education: Specialization diploma in Breeding, hygiene, pathology of aquatic animals and inspection of fish-products, University of Padua (2005); Degree in Veterinary Medicine (DVM), University of Padova (2002).
Research interests: The research interests could be summarized into three major topics. The first research interest aimed to the development of new methods for the foodborne bacteria characterization. The studies aimed to assess the epidemiological links among isolates and to identify sources of contamination (microbial tracking). The second topic is the application of innovative/alternative methods (e.g. plant extract) to the food matrices in order to investigate the bactericidal effect and their application on the food matrixed during the shelf life. The last field of researches was dedicated to innovative methods for food tracking and authentication by biomolecular methods and by the use of near-infrared spectroscopy.
